On completion of the module students will be able to:
(1) Demonstrate an appreciation of the structure and function of principle macromolecules and pathways in the extraction of energy from foods;
(2) Explain inter-relationships between selected nutrients at the cellular and molecular level;
(3) Demonstrate an understanding of the basic mechanisms of metabolic regulation;
(4) Describe a range of common metabolic disorders.
Fundamentals of absorption digestion and excretion. Nutrient groups and chemical characteristics. Main features of metabolism. Metabolism of fat, protein and carbohydrate regulation of metabolism. Concepts of adequacy and excess. Vitamins, iron, zinc and other trace elements. Antioxidants. Integration of metabolites. Identification of markers of nutritional status.
